Spinach Parsley Pesto

Ingredients

  • Produce: 
    • 4 cups spinach
    • 4 cups fresh parsley
    • 2-3 cloves garlic (optional; roasted)
    • ¼ cup lemon juice
  • Nuts: 
    • 2 cups walnuts, pistachios, or pine nuts
  • Baking + Spices (optional): 
    • Salt and pepper to taste
  • Oil:
    • 2 cups olive oil

  1. Add all ingredients to food processor and puree until desired pesto consistency.
